Two Delicious & Easy Meals!

I amaze myself. Really, I just hit it out of the park with these meals. Okay, maybe I exaggerate a bit. But they were delicious enough that I thought, hey, other people need to know about these!

First -

Pulled Pork in the Crock Pot

Now, this sounds so basic & I'm sure you've all made it before, quite possibly a million times. Oh, but did you make it with a homemade barbeque sauce?! Of course, this is where I become really lame. I'm bad at just throwing things together instead of measuring so I can't tell you exact amounts. But here's what I think I did - or close - ;)

Place your cut of pork (apparently shoulder or butt [which is allegedly also shoulder] is best; not sure what I used but it turned out great [super helpful I know]) in the crock pot.

Cover with your homemade sauce (see below).

Cook on low 6-8 hours.

Pull pork & let it sit in sauce a little longer.

Place pulled pork on half a baked potato & add a dollop of sour cream (YES REALLY - I don't even know why I did this except that it was the best decision of my life.)

Homemade sauce:
About half a cup of white vinegar
About half a cup of ketchup
About a quarter cup of honey (add more to taste)
2 cloves of garlic, minced
2 tablespoons Worchestershire
salt & pepper to taste

I'm telling you... the sauce made the difference! & with the sour cream... YUM!

Hummus Chicken

This one is way easier & requires no measuring (phew!).

Pour small amount of olive oil into clear dish, enough to cover the bottom.

Prepare chicken breasts & place into dish.

Salt & pepper chicken liberally.

Smear hummus over the top of the chicken.

Place into 450 degree oven for 30 minutes.

Voila! Serve with some roasted broccoli & you've got yourself a tasty dinner!
