Dinner Ideas

If you're like me, occasionally you get into a food rut. I don't really care for making the same recipes over & over; I like a lot of variety in our dinner menu from week to week. So I'm constantly searching for new recipes to try. All three of the recipes I made last week were delicious, so I wanted to pass them on to you!

First up: pasta & meatballs! Not something you find in our house very often. I used gluten free, ancient grain pasta. For the sauce, I got a large can of organic crushed tomatoes & warmed them in my Dutch oven. I added in some salt, pepper, garlic, onion powder, & chopped zucchini, then put the lid on so it could simmer over medium-low heat in order to flavor the sauce & cook the zucchini. When the sauce was done, I cooled it a bit (so the intense heat wouldn't kill off the therapeutic benefits of the oil), & added in one drop of the Taste of Italy essential oil blend, which contains basil & four types of oregano. A little goes a long way with this oil! So if you want to try it, I would recommend using a toothpick to get less than a drop first, then adding more as needed. (If you don't have this oil, just add the herbs.) I then made meatballs using venison from our freezer (the Hubs hunts so we always have it available). I mixed in one egg, a handful of dried oatmeal, some shredded parmesan, salt, pepper, garlic powder, onion powder, & parsley, then baked them in the oven. Throw it all together, & you have a delicious & healthy Italian meal!

I don't have a picture for this one, but another night, I made salmon, rice, & roasted asparagus. Simple yet flavorful. I season my salmon with garlic powder, onion powder, cumin, chili powder, salt & pepper then bake it in the oven. I splurged & put some Kerrygold (grass-fed) butter in with the rice - we don't use butter often, which makes us more sensitive to it, which makes it more YUM. I tossed the asparagus with olive oil & salt & roasted it in the oven. I love roasted veggies!

One last meal for the week: eggs & mustard creamed chard. I bought the chard & the eggs from the farmers market, & used gluten free bread for the crumbs. I don't even like mustard, but the flavors of this recipe work so well together. The Hubs really likes it.

  1. All 3 sound amazing! I like baking salmon with lemon slices on top-same thing with asparagus with some garlic cloves and mushrooms. Yum! Have you ever made chili with the venison? We don't have easy access to deer meet, but it's wonderful.
