Friday Food: Red Beans and Rice

Easy Red Beans and Rice

1 lb dry kidney beans
2 tablespoons olive oil
1 large onion, chopped
2 green bell peppers, chopped
2 tablespoons minced garlic
6 cups water
2 bay leaves
1/2 teaspoon cayenne pepper
1 teaspoon dried thyme
1/4 teaspoon dried sage
1 tablespoon dried parsley
1/4 teaspoon oregano
1 teaspoon Cajun seasoning
1 lb andouille sausage, sliced
cooked long grain rice


Rinse beans and soak in water overnight.

In a skillet, heat oil over medium heat. Cook onions, bell peppers and garlic for 4 minutes.

Rinse beans, transfer to a large pot with 6 cups water. Add cooked vegetables into the beans. Add remaining seasonings. Bring to boil, reduce heat to medium-low. Simmer for 2 hours.

Add in sausage into the beans and simmer for 30 minutes.

Serve beans over rice.
