Homemade Vanilla Extract

I love vanilla extract. And what's better than vanilla extract? Homemade vanilla extract! It's easy and you know exactly what you are getting from it! Pure, simple and delicious vanilla extract.

The only downside is that it takes a very long time to mature. I made my first batch back in November 2013. 9 months later and it still has awhile to go, BUT this is because I used less beans than you should. Right now it is light and perfect for putting straight into a light drink or over ice cream. Eventually it will get thicker and stronger and will be ready for baking needs. If you use the correct amount of beans, it could take anywhere from 2-6 months to see it get nice and syrupy.

Now, there are SO many different ways to make this using different alcohols and beans. Today I will just give you my way.


Glass jar with an air tight lid
5-7 Madagascar Vanilla Beans
1 cup Vodka (cheap brand works fine)

Use a knife to split the bean in half, leave about ½ inch at each end intact.
Put your vanilla beans in your jar and cover with the vodka.
Close jar tightly and store in a cool, dry place. Give the jar a swirl every once in awhile.
Leave the beans in until it has reached its desired strength.
