Recipe: Brussels Sprouts Hash

I'm currently eating the leftovers from this meal that I made last week, & I think it is super yummy so I am going to share it with you! If you think it sounds good, I'm betting you'll like it too. If you don't like Brussels sprouts, then something is wrong with you. Just kidding. Kind of. Anyways, don't make this if that's you. ;)

I was inspired by a recipe that I saw in a magazine, but I changed it up, so here it is -

About 1 lb organic Brussels sprouts (I used two containers, can't remember the weight)
3 strips of bacon (more if you love bacon - nitrite/nitrate free)
4 medium red potatoes (organic if available - I couldn't find them)
4 eggs (preferably from pastured chickens because they are healthier & taste way better!)
Extra virgin olive oil
Spices (I used onion powder & garlic powder)

Cut potatoes into 1 inch pieces, toss with EVOO, & roast at 425 degrees for about 20 minutes, until soft
Quarter Brussels sprouts, toss with EVOO, & roast at 425 for 15-20 minutes, until starting to brown (I LOVE roasted Brussels sprouts!)
Cut bacon into small pieces & brown on medium-high heat
Cook eggs as desired - I like them a soft over medium
Mix the roasted potatoes, Brussels sprouts, & bacon together, add spices, then plate mixture & top with egg
